Blender Keto Pancakes

Have you been missing pancakes since you started eating Keto? Well, now you can have pancakes for breakfast, lunch, and dinner and still avoid the feeling of carb guilt! With only 4 ingredients, these pancakes are so easy to make, too!


Begin by placing all the ingredients into a blender. If you want to make it even easier on yourself and make clean up a snap, then use some sort of individual shake blender. I like to use my Nutri Bullet blender. This recipe doesn’t require a lot of mixing power, so it shouldn’t bog down a single serving type blender.

Blend the ingredients until they are mixed and smooth. The consistency will be runny. It is best to use softened cream cheese before blending, so if you are in a hurry, place the cream cheese in a bowl and warm it for 20 seconds in the microwave to soften it before hand. Once all the ingredients are blended, then your batter is ready to make some pancakes!

Turn your burner onto a medium-low heat and grease your griddle with butter or cooking spray. Be sure your griddle is hot enough. (If you sprinkle some water onto the griddle and the water sizzles and dances, then your griddle is hot enough) Pour a 1/4 cup of the batter for each pancake round.

 

Allow the pancakes to cook for about 1 1/2 to 2 minutes before flipping them. The heat output of your stove top and cooking surface can vary, so adjust the cooking time accordingly. (My front burner is larger than my back burner, so I am always adjusting the flame when I use my double long griddle pan)(If you have an electric griddle, you should have a more even heat distribution.) The idea is to cook on a lower heat, so that the batter will not burn while the pancake is forming enough to flip them. Remember, these pancakes are made of cream cheese and egg, so they will cook similar to scrambled eggs.

The pancakes will be thin, but are very filling! Serve these pancakes with sugar free syrup, like Maple Grove Farms or some fresh berries! You can even double or triple the recipe to make extra for later, because they warm up nicely. Enjoy!

Servings 1 (4 pancakes)

Ingredients
  

  • 2 Ounces Cream Cheese (Softened)
  • 2 Eggs
  • 1 tsp. Granulated Sweetener (Like Swerve or Monkfruit)
  • 1/2 tsp. Ground Cinnamon

Instructions
 

  • Place all ingredients into a blender and blend until smooth.
  • Pour 1/4 Cup batter onto a greased pre-heated griddle, set to Medium-Low heat.
  • Cook for 1 1/2 to 2 minutes until golden brown, then flip and cook for about another 1 minute.
  • Repeat until all pancakes are formed. (This recipe should make 4 pancakes, which equals 1 serving.)
